At ÚNU, the Tết fruit platter is reimagined at the table through the language of contemporary cuisine, where traditional values are distilled and retold with clarity, balance, and emotional depth.
“Mâm Quả Ngày Tết” is a Tết dinner created in collaboration with Chaîne des Rôtisseurs Bailliage du Vietnam, opening a refined dialogue between Vietnamese culinary heritage and modern creative thinking. The experience unfolds at a gentle pace, allowing guests to pause, reflect, and revisit Tết through a renewed perspective.
A Spring Fruit–Inspired Menu
The menu is curated under the guidance of Chef Đồng Hoàng Nam, drawing inspiration from carefully selected seasonal spring fruits. Ingredients deeply connected to harvest cycles and Vietnamese culinary memory form the foundation of a contemporary five-course Tết menu, with each dish offering a distinct interpretation of the traditional fruit platter.
From familiar elements, each course is developed using modern techniques and minimalist presentation, allowing the essence of flavor to emerge with quiet precision. Every dish becomes a balanced expression of tradition and contemporary spirit—familiar, yet gently unexpected.
The dining experience is completed with thoughtfully selected wine pairings for each course, creating a sense of harmony in both flavor and rhythm throughout the evening.
