When Thai mixology meets ÚNU

On March 6th, the vibrant spirit of Thailand’s mixology scene will arrive at ÚNU eatery & cocktails for a special guest shift night.

Leading this collaboration is Ronnaporn “Neung” Kanivichaporn – Global Champion of Bacardi Legacy, a familiar face on international cocktail stages. Joining him is Suphamit, his teammate from Mahaniyom Cocktail Bar Bangkok.

Together, they bring to Saigon the signature identity of Mahaniyom — where technique, creativity, and sustainability come together in every cocktail.

Mahaniyom Cocktail Bar Bangkok – A Standout in Asia-Pacific

Mahaniyom Cocktail Bar has become one of Bangkok’s most notable destinations. In recent years, the bar has consistently been recognized in prestigious rankings such as Tatler Best 100 Bars Asia-Pacific, Tatler Best Bars Thailand, and has repeatedly earned a spot on Asia’s 50 Best Bars list with impressive rankings.

Named Best New Opening Bar by London Essence in 2023, Mahaniyom has quickly established itself not only in Thailand but across the region. These achievements reflect both technical excellence and a distinctive, responsible approach to mixology.

Resourceful Cocktail – Every Ingredient, Fully Expressed

At Mahaniyom, creativity is built on the concept of the “Resourceful Cocktail” — a philosophy that every ingredient carries its own inherent perfection.

Rather than focusing on a single flavor profile, the team explores the full potential of each ingredient through various techniques, maximizing its value while minimizing waste.

Through refined craftsmanship, Mahaniyom has developed 12 signature cocktails, each named after a single ingredient. That ingredient is expressed in multiple forms to create depth and a unique flavor structure. This approach is not only a story of flavor, but also a statement of respect for resources.

Nose-to-Tail – A Sustainable Evolution in Mixology

Building on the Resourceful Cocktail concept, Mahaniyom’s latest menu introduces a nose-to-tail approach to cocktail making.

This creative method highlights unique ingredients while minimizing waste by utilizing every part of them — from the familiar to the often overlooked.

Each cocktail is carefully crafted to offer an experience that is both exciting and sustainable. Guests are invited not only to enjoy authentic flavors in their fullest expression, but also to engage with a philosophy rooted in environmental responsibility.

An evening where Bangkok meets Saigon through thoughtfully crafted cocktails.

We look forward to welcoming you at the bar on March 6th.

Inspired by winter memories, moments of togetherness, and the comforting warmth of familiar tastes, Winter Memoirs brings together cocktails and mocktails crafted with balance and intention. The menu reflects ÚNU’s approach to contemporary mixology, thoughtfully paired with its modern culinary spirit.
Perfect for year end gatherings, slow winter evenings, or a moment set aside just for yourself.

Snowfall

Artichoke infused vodka, cold brew coffee, coffee liqueur, peanut butter, white chocolate.

Snowfall explores the contrast between hot and cold. The chilled base highlights the bitterness and roasted notes of coffee, while the warm white chocolate cream on top softens the experience, creating a smooth and comforting finish.

Peanut butter adds richness and depth, evoking memories of cozy Christmas nights filled with warmth and togetherness. Combined with coffee and chocolate, it creates a lingering, rounded flavor.
Snowfall is more than a cocktail. It is a winter memory held in a glass.

Winter Memory

Soy milk, coconut cream, ginger syrup, honey, fresh ginger, rice vodka.

Inspired by winter mornings in Da Lat, Winter Memory recalls simple and comforting moments. A warm glass of soy milk, gentle ginger heat, and the calm of a slow winter day.

Served warm, the drink allows layers of soy milk, ginger, honey, and rice vodka to unfold gradually, offering a soft and nostalgic experience.
Each sip feels familiar, soothing, and quietly reflective.

Red Christmas (Mocktail)

Apple juice, strawberry syrup, shiso leaf sour.

Red Christmas is a fresh non alcoholic option designed for easy enjoyment. Lightly sweet, gently tart, and vibrantly festive, it offers a balanced and refreshing take on holiday flavors.

Crafted with the same care as our cocktails, Red Christmas proves that a mocktail can be just as expressive. Simple, thoughtful, and full of seasonal charm.

Join us at ÚNU and discover Winter Memoirs, a seasonal collection of handcrafted cocktails and mocktails, waiting to be shared, remembered, and enjoyed this Christmas.

A place where flavors and art speak to each other

On the ground and mezzanine floors of Anima Saigon Hotel – an art hotel in Ho Chi Minh City’s District 1 – ÚNU Cocktails & Eatery welcomes guests into a world where ingredients, memories, and creativity flow together. Seasonal produce, local heritage, and artistic expression shape the drinks and dishes here, making ÚNU one of the most distinctive cocktail bars in Saigon.

At the heart of the experience is Liquid Stories – a signature cocktail menu created with seven artists from the Anima project. Each drink is drawn from a memory: a childhood flavor, a place, or a turning point in life. Through careful blending and distillation, these memories become flavors that guests can sip, reflect on, and carry with them.

Liquid Stories – a flow of memory

The menu unfolds like a journey with three pathways:

  • Classic – familiar tastes, reimagined with subtle layers.

  • Inside – intimate reflections of the inner self.

  • Outside – bold expressions of creativity.

Guests can follow the journey in order or pause at a single story. Each cocktail is both a drink and a conversation with place, memory, and emotion.

Seven artists, seven flavors of memory

Tuyp Tran – A slice of Saigon
When Tuyp first arrived in the South, the taste of broken rice and street-side ambarella stayed with him. His cocktail combines tequila, pickled mango, ambarella, and chili – bright, direct, and alive with Saigon’s spirit.
When was the last time you shared a sour-salty snack with friends, laughing between bites?

Pham Xeen – The salt of the sea

Childhood in Can Gio was marked by salt fields, fishing trips, and bowls of sour fish soup. His cocktail blends gin, tomato, salted berries, and soda – balanced and refreshing, like the sea breeze of his hometown.
What does the sea taste like to you?

Bach Vu – Between Hanoi and London

Born in Hanoi, shaped by years abroad, Bach remembers both bia hoi streets and London afternoons with spritz. His cocktail brings Moscato, beer foam, curry leaf, and root beer – a bridge between East and West, home and longing.
Is there a taste you’ve carried with you, no matter where you go?

Mzung Nguyen – A taste of the central coast

Her Central Vietnam memories are filled with sun, wind, waves, and the scent of shrimp paste in clay jars. Her cocktail, made with gin, wine, and soursop soda, is tangy and herbal – like a tide that steadies the soul.
What flavor brings the coast back to you?

Dang Quang Tien – Warmth of the Mekong

He recalls late afternoons when his mother cracked open coconuts in the garden. His cocktail is aged inside a dry coconut, with whisky, Campari, and fino sherry soaked into the flesh – sweet, earthy, and layered like a family meal.
Which taste takes you back to your family table?

Le Phi Long – Morning on the Perfume River

Mist over the Huong River, a pagoda bell ringing at dawn – these are Long’s memories of Hue. His cocktail merges rum, longan, and lotus foam – light, calm, and pure, like meditation in a glass.
Which quiet moment has stayed with you?

Quoc Anh Le – The spirit of change

As a boy, his treat was Milo ice from his uncle’s cart – sweet, cold, and filled with laughter. His cocktail grows that memory into adulthood with whisky, chocolate, mint, and roasted nut ice – playful and bold, echoing his spirit of change.
Do you still remember the thrill of a childhood treat you longed for?

A journey to be savored slowly
